Israeli Toasted Couscous Pudding

INGREDIENTS:
250g packet of Israeli Toasted Couscous
1Ltr Milk
70g raisins or raisin medley
70g diced dried apricots
2tsp ground cinnamon
2 heaped tablespoons brown sugar
2tsp Pure Vanilla essence or the seeds from one vanilla pod

METHOD:

In a saucepan, mix the couscous and milk together and bring to the boil.

Add sugar, dried fruits and vanilla.  Reduce heat and allow to simmer for 10-12 minutes.  The couscous will absorb most of the most to make a rice pudding-like consistency.

To serve, spoon into deep dishes with fresh fruit, mascapone and drizzle with Te Motu Vincotto.

This pudding is a take on a classic Iranian dish that uses rice and fruits to create a sweet, soft dessert treat.
