Mediterranean Israeli Toasted Couscous Salad
INGREDIENTS:
250g packet of Israeli Toasted Couscous
Handful of semi dried tomatoes, diced
50g creamy feta, diced
1/4 segment of preserved lemon (inside removed and rind very finely chopped)
Handful of fresh herbs
DRESSING:
Mix 50ml extra virgin olive oil with 20ml sesame oil and 1 tablespoon of white balsamic vinegar with salt and pepper to taste.
METHOD:
Cook Israeli Toasted Couscous as per instructions on the packet, then refresh under cold water and drain well.
Add dressing, feta, lemon and fresh herbs to the cooked couscous and mix well. Taste and adjust seasoning as needed. Feel free to add any of the variations listed or enjoy just as it is.
